Comments of the cellarman: Top of range fruity wine. The robe is sustained, the nose develops aromas of red fruit, and precedes an ample mouth with nice tannins on a supple and intense final.
Wine making:
Selection of parcels by an independent authority. Parcel maturity control. Yields less than 40 hl/ha.
Traditional wine making process with destemming without crushing. Post fermentation skin contact of around 3 weeks for the shiraz variety.
The 2 varieties are raised separately during 12 months in order to develop the characteristics of each one before final assembly.
To be served with: red meats, grilled meats, meats with sauce, poultry, cheese. This full bodied wine will match an elaborate cuisine.
