Comments of the cellarman
Golden reflections in the colour. Intense nose with mixed smells of citrus and honey. The start in mouth is ample and sharp, revealing grilled, brioche-like aromas. Freshness, fat, and delicacy dominate the end of mouth.

Vinification
AB Label (Organic wine)
In the vineyard are only allowed natural products: organic fertilizer (manure), copper against mildew, sulfur against powdery mildew. Excludes all synthetic products such as herbicides, pesticides, GMOs. Organic standards compliance is checked twice a year by the Bureau Veritas. Night harvest to preserve the flavors of the grapes. The grapes macerate 2-3 pm in the press before pressing at low pressure to dissolve a maximum of aromas. The juice is then clarified naturally at room temperature for 48 h.
The alcoholic fermentation is done in new French oak barrels between 18°c and 20°c.
Then the 2 wines are stick-stirred during one month, every other day in the first 2 weeks, and every 4 days later on.
Next we continue the raising in barrels during 9 to 10 months.
Then the 2 wines are drawn out of the barrels and blended in tanks where the end product is clarified before the bottling takes place one year after harvest.
