Grape varieties Syrah 75%, Mourvèdre 25%

Comments of the cellarman
Wine with garnet reflections , fragrances of chocolate and red fruits. The mouth is delicate and the tannins are melted and powerful. The barrel ageing brings full-body and aromatic complexity .

Vinification
Traditional wine making process includes fermentation between 24° and 26° Celsius in order to extract color and develop a deep structure in mouth. Syrah and mourvèdre are raised 12 months separately in oak barrels so as to develop the characteristics of each variety. The ageing of the wine continues 10 months in vat before the bottling.

Food pairing
Meat with sauce, Roquefort (cheese). This full-bodied will go with an elaborate  cooking.

Rewards       
One star in 2008, 2009, and 2012 editions of Hachette Guide, two stars in 2015 edition. The 2011 vintage obtained one star in 2016 Hachette Guide, a Silver medal at the 2014 Grands Vins du Languedoc contest, and a Silver medal at the 2014 Miami contest. The 2013 vintage has obtained a Bronze medal at the 2016 International Wine Challenge.
