Wine making:
Parcel maturity control.
Harvest by night in order to keep the aromas of the grapes.
The grapes are directly pressed, then naturally clarified at cold temperature during 48 hours.
Alcoholic fermentation is done between 15° and 18° C, in stainless steel tanks, during 3 weeks.
Then a second fermentation in tank stirred by the "liqueur de tirage" (sugar and yeast),
called "prise de mousse" as the bubbles are created in that process, takes place for over 10 months.
Wine is then refined with a "liqueur de dosage" to convey the extra dry characteristic.
