Parcel maturity control.
Harvest by night in order to keep the aromas of the grapes.
The grapes are directly pressed, then naturally clarified at cold temperature during 48 hours.
Alcoholic fermentation is done between 15° and 18° C, in stainless steel tanks, during 3 weeks.
The "prise de mousse" (second fermentation which generates the bubbles) is done in bottles. The raising goes on for a period longer than 10 months.
The wine is then refined with a “liqueur de dosage” which gives it its “brut” feature.
